Lamb Stew with Orange


"Lamb Stew with Orange" recipe features lamb stew meat, flavorful spices, apricots, and hearty root vegetables like parsnips and carrots that is just delicious.


Ingredients

3 ½ lbs lamb shoulder, cut into 1-inch pieces
3/4 teaspoon sea salt
1/2 teaspoon  black pepper
1/4 cup red wine vinegar
3/4 cup dry red wine
1/4 teaspoon  allspice
2 Tablespoons olive oil
2 Tablespoons fresh mint; chopped
2 cups onions, chopped
2 cups parsnips, diced
1 cup carrots, sliced
1 cup celery, sliced
3 cloves garlic, chopped
1 1/2 Tablespoons fresh ginger, minced
1 cup orange juice
2 cups Pacific Organic Chicken Broth
1 teaspoon rosemary; minced
1/4 cup fresh parsley, chopped
Tablespoon tomato paste
1 (8 oz.) can tomato sauce

Directions

Heat the oil in a large pot over high heat until hot but not smoking. 

Season the meat lightly with salt and pepper and sear in the oil until browned on all sides, about 5 minutes. 

Add the onions, ginger and garlic and cook an additional 5 minutes. 

Add the tomato paste and stir to incorporate, cooking for 2 to 3 minutes. 

Add the celery, carrots, parsnips, vinegar, wine, chicken broth, tomato sauce, orange zest, juice and allspice. 

Bring to a boil, then reduce heat, cover and simmer until lamb is tender, about 90 minutes. 

Season with salt and pepper to taste. 

Remove from heat, cool slightly and ladle into bowls.

Top stew with fresh mint and serve.

Sausage and Vegetable Soup


Lighten up a hearty sausage soup recipe with Italian sausage and add flavor with canned tomatoes, fresh basil and Parmesan cheese.


Ingredients:

1 pkg Italian Style Sausages
2 Tbsp extra virgin olive oil
1 1/2 tsp ground cumin
1/4 tsp freshly cracked pepper
1 (32-ounce) pkg vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn, drained
1 (14-ounce) can diced tomatoes, drained
1 1/2 c zucchini strips, cut into 1-inch pieces
2 Tbsp canned chopped chilies
cooked brown rice or pasta
freshly shredded Parmesan cheese, garnish


Directions

In Dutch oven, over medium heat, place olive oil.

Add sausage pieces; cook and stir over medium heat for 5 minutes.

Remove sausage from pan.

In same pan, add cumin and pepper; cook and stir 1 minute.

Add vegetable broth, black beans, corn, diced tomatoes, and chilies.

Cover mixture; bring to a boil (5 to 6 minutes).

Add sausage and zucchini. Continue cooking, stirring occasionally, 2 to 3 minutes or until heated through.

Serve soup in bowls over rice or pasta and sprinkle with Parmesan cheese.


Hungarian Beef Goulash

Ingredients


1 pound lean ground beef
1 medium onion, chopped
1 medium red bell pepper, chopped
1 garlic clove, minced
1 Tablespoon paprika
1 teaspoon dried thyme
3½ cups beef broth
4 cups medium egg noodles
¼ cup sour cream
Sea Salt and Pepper to taste.


Directions
In a large skillet, brown the beef over medium-high heat, breaking up any large chunks of a spoon.
Stir in the onion, bell pepper, and garlic. 

Cook, stirring often, for 8 minutes.
Stir in the paprika and thyme.
Add the broth and noodles. 

Bring to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for 8 to 10 minutes, stirring occasionally, until noodles are tender.
Stir the sour cream into the noodle mixture and simmer, uncovered, for 2 minutes.

Serve.

Garlic Shrimp with Buttered and Herbs Fettuccine

Garlic Shrimp

You'll be asking yourself, "Why dear lord have I never done this before?!?!?! Garlic Shrimp with Buttered and Herbs Fettuccine is absolutely delicious!! Creamy and full of flavor this is why it's a great option for an Italian inspired meal. 


Ingredients

2 pounds cooked shrimp, peeled and deveined
1 cup olive oil
1 teaspoon celery salt
1 teaspoon paprika
1 teaspoon dried or fresh basil
1 teaspoon dried or fresh oregano
1 teaspoon minced garlic

Pasta

1 pound Fettuccine pasta, cooked 
3 Tablespoons butter
1 teaspoon dried or fresh basil
1/2 teaspoon minced garlic



Directions 

In a small mixing bowl, combine oil, celery salt, paprika, basil, oregano and garlic mix well.
Layer shrimp on the bottom of an ungreased 13x9 baking dish.
Pour mixture over shrimp. 
Broil 4 to 5 inches from heat source on low-heat four 5 to 10 minutes or until shrimp are bright pink and hot. 
Remove from heat.

Pasta
In a small skillet melt butter add basil and garlic cook for 2-3 minutes.
Remove from heat.
Drain pasta (do not rinse) and pour into a large bowl.
Pour butter mixture over the pasta, add shrimp and mix well.
Plate pasta and top with fresh parsley.
Serve with slices of  warm Italian garlic bread .



Italian Hungry Man's Quiche


"Italian Hungry Man's Quiche"recipe is fast, simple, delicious and outstanding! Perfect for brunch, a light dinner or the holidays. 



Ingredients

1 cup heavy cream
5 eggs; beaten until blended
2 cups grated mozzarella cheese
1/2 cup ricotta cheese
1/2 cup cubed ham; 1/4-inch cubes
3 garlic cloves; minced
1 teaspoon fresh parsley; chopped


Directions

Preheat oven to 325 degrees F. 

Place pastry crust in 10-inch dish, crimp edges, and prick bottom in several places.

Bake crust for 15 minutes, then remove from oven.

Increase oven temperature to 375 F. degrees. 

Layer ricotta cheese, ham, and mozzarella cheese into crust. 

Beat eggs, garlic, parsley and cream together and pour into crust.

Bake 30 minutes at 375 F. degrees.

Lower heat to 350 F. degrees and bake for additional 10 minutes.

Baked Macaroni Cheese with Bread Crumbs


There's nothing's as comforting "Baked Macaroni Cheese with Bread Crumbs" tender pasta with creamy cheese topped with Mom's buttery Italian Garlic and Parmesan Cheese Bread Crumbs


Ingredients

1/2 pound elbow macaroni
3 Tablespoons butter
3 Tablespoons flour
1 Tablespoon powdered mustard
1/4 tablespoon powdered garlic
3 cups milk
1/2 cup yellow onion; minced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon Sea Salt
Fresh black pepper
Topping

1/4 cup I Can't Believe It's Not Butter
1 cup bread Italian crumbs
3 Tablespoons grated Parmesan Cheese
1 teaspoon garlic powder

Directions

Preheat oven to 350 degrees F.

In a large pot of boiling, salted water cook the pasta to al dente.

While the pasta is cooking, in a separate pot, melt the butter.

Whisk in the flour and mustard and keep it moving for about five minutes.

Make sure it's free of lumps.

Stir in the milk, onion, bay leaf, and paprika.

Simmer for ten minutes and remove the bay leaf.

Temper in the egg.

Stir in 3/4 of the cheese.

Season with sea salt and pepper.

Fold the macaroni into the mix and pour into a 2-quart casserole dish.

Top with remaining cheese.


Topping

Melt the butter in a saute pan and remove from heat.

Add the bread crumbs, cheese, and garlic,

Mix until evenly coated.

Top the macaroni with the bread crumbs.

Bake for 30 minutes.

Remove from oven and rest for 5- 8 minutes before serving.

Creamy Spinach and Mushroom Lasagna


Spinach and fresh mushrooms fill this meat-free lasagna. Cottage cheese and ricotta cheese add a rich and creamy texture... Delicious! This is extremely rich lasagna. It offers a suitable way to get a dose of spinach and mushrooms. All the flavors melt together as they bake with a blend of cheeses.

Ingredients

Vegetable oil spray
8 curly-edged lasagna noodles (7 ounces), broken in half
Sea Salt and pepper to taste
1 Tablespoon extra-virgin oil
1 1/2 lbs. white mushrooms, trimmed and sliced thin
2 garlic cloves, minced
20 ounces frozen spinach, thawed, squeezed dry, and chopped coarse
1 (15-oz) jar Alfredo sauce
2 cups ricotta cheese (15 ounces)
2 cups cottage cheese (15 ounces)
1 3/4 cups grated Parmesan cheese (2½ ounces)
1/2 cup minced fresh basil
1 large egg
4 cups shredded mozzarella cheese (1 pound)


Directions

Bring 4 quarts water to boil in large pot. 

Add broken lasagna noodles and 1 tablespoon salt and cook, stirring often, until al dente. 

Drain noodles, rinse under cold water until cook, then spread out in single layer over clean kitchen towels and let dry. (Do not use paper towels; they will stick to noodles.)

Heat oil in pot over medium-high heat until shimmering. 

Add mushrooms, garlic, and ¼ teaspoon salt, cover and cook until mushrooms are softened, about 5 minutes. Uncover and continue to cook until mushrooms are dry and browned, 5 to 10 minutes longer. 

Stir in spinach and Alfredo sauce, scraping up any browned bits, and season with sea salt and pepper to taste.

In bowl, mix ricotta, cottage cheese, 1 cup Parmesan, basil, egg, ½ teaspoon salt, and ½ teaspoon pepper together. 

Spread ½ cup mushroom spinach sauce into prepared slow cooker.

Arrange 4 lasagna noodle pieces in crock pot (they may overlap), then dollop 9 rounded tablespoons of ricotta mixture over noodles. Sprinkle with 1 cup mozzarella, then spoon 1 cup more mushroom-spinach sauce over top. 

Repeat layering of lasagna noodles, ricotta mixture, mozzarella, and mushroom-spinach sauce twice more.

For final layer, arrange remaining 4 noodles in slow cooker, then top with remaining mushroom-spinach sauce and sprinkle with remaining mozzarella and remaining Parmesan. 

Cover and cook until lasagna is heated through, about 4 hours on low.

Let lasagna cool for 20 minutes.

Serve.



Chive Dumplings



Chive Dumplings is a delicious way to spruce up a soup or stew.


Ingredients

3 Tablespoons butter
1 1/2 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
3 Tablespoons fresh, chopped chives, or 2 Tablespoons dried chives
3/4 cup skim milk

Directions

Before serving, prepare chive dumplings by mixing dry ingredients and butter.

Add chives and milk, combine well. 

Drop by teaspoonfuls onto hot soup or gravy. 

Cover and cook on high for an additional 20 to 30 minutes.



Bourbon Turkey


Bourbon Turkey is a tangy-sweet marinade flavors of turkey on the grill. 


Ingredients

skinless boneless turkey breasts; cubed                  
1 teaspoon  ground ginger
2 ozs. soy sauce
2 Tablespoons minced onion
3/4 cup dark brown sugar (packed)
3/8 cup Wild Turkey Bourbon
1/2 teaspoon garlic powder

Directions

Place chicken breasts in a 9x13 inch baking dish. 


In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. 

Mix together and pour mixture over chicken. 

Cover dish and place in refrigerator. 

Marinate overnight.

Preheat oven to 325 degrees F.


Remove dish from refrigerator and remove cover.


Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.
