Classic Smokey Pulled Chicken On A Roll and Chips


Now you don't have to go to Texas to indulge in a classic treat...This “Classic Smokey Pulled Chicken On A Roll and Chips” recipe is melt in your mouth good!


Ingredients
1 whole  precooked rotisserie chicken
10  sandwich rolls 
4 (1-ounce) slices Cheddar cheese, mild or sharp
1 cup chicken stock
1 bottle Kraft BBQ Sauce

Sauce 
1 large yellow onion, chopped
6 garlic cloves, peeled and diced
1 Tablespoons Chipottle Chile Powder
1 Tablespoon tomato paste
2 Tablespoons Dijon Mustard
3/4 cup apple cider vinegar
1 teaspoon  paprika 
1/3 cup Heinz Ketchup 
2 drops liquid smoke
2 teaspoons Worcestershire Sauce
1/4 cup brown sugar
1 pinch sea salt
1/4 teaspoon ground cloves
2 Tablespoons Grandma's Molasses

Directions
Puree all of the sauce ingredients in a blender until smooth. 
Remove all the skin from the chicken.
Pull all the meat off the bones and place in a large bowl.
Pour puree sauce over the chicken and mix well.
Cover and marinate the chicken in the sauce overnight or for several hours before cooking.
After marinating the chicken in the sauce pour the mixture into the crock pot. 
Add chicken stock, mix well.
Cook on low heat for 4 to 6 hours or on high for 2 to 3 hours.

Remove from heat and let cool down in the sauce. 
When cooled, remove the chicken from the sauce and shred into small pieces. 
Set aside.
Reduce the sauce by two thirds. 
Add the chicken back to the sauce. 
Serve hot over open-face rolls or  hamburger buns topped with cheese and BBQ sauce.
Add our Homemade British Chunky Chips .

Garden Minestrone Soup

Ingredients

1 cup finely minced onion 
3 cloves finely minced garlic

1 cup finely minced celery 

1 cup finely minced carrot 

1/4 cup Can't Believe It's Not Butter 
1/2 cup garbanzo beans 
1/4 cup kidney beans 
1/2 cup whole dried peas 
1/2 cup white pea beans 
3/4 cup sliced carrots 
3/4 cup coarsely chopped yellow onion 
3/4 cup sliced celery
3/4 cup chopped red bell pepper 
1/4 cup brown or white rice
1/4 cup barley
1 cup shell macaroni
1 1/2 Tablespoons minced parsley 
12 teaspoon oregano
1 teaspoon basil
2 teaspoons soy sauce
3 quarts vegetable stock
Sea Salt and Pepper to taste
Parmesan cheese

Directions

Slowly sauté finely minced onion, celery and carrot in butter until very brown. 

Add all the ingredients (except parmesan cheese) and about 3 quarts of vegetable stock to the crock pot.

Cook on low until beans are almost about 7 to 8 hours.

Get the macaroni ready by rinsing and set side.

About 20 minutes before serving time add the macaroni.

Ladle into bowls and sprinkle with Parmesan cheese.

Serve with garlic bread.

Roman-style Chicken



"Roman-style Chicken" is so delicious and simple to make in a crock pot.


Ingredients


6 skinless boneless chicken breast halves
4 skinless chicken thighs, with bones
1 1/4 teaspoon Sea Salt
1 teaspoon freshly ground black pepper
1/4 cup extra olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
4 ounces prosciutto, finely chopped
3 cloves garlic, minced
1 (15-ounce) can diced tomatoes
3/4 cup White Cooking Wine
1 Tablespoon fresh thyme leaves
1 teaspoon fresh oregano leaves
2 cups chicken stock
2 tablespoons capers
1/4 cup chopped fresh flat-leaf parsley leaves

Directions

Season the chicken with salt and pepper. 

In a heavy, large skillet, heat the olive oil over medium heat. 

Then cook the chicken until browned on both sides. 

Remove from the pan and place in crock pot.

In the same pan over medium heat, add the peppers and prosciutto and cook until the peppers have browned and the prosciutto is crisp, about 5 minutes. 

Add the garlic and cook for 2 minute. 

Add the tomatoes, wine, and herbs. 

Using a wooden spoon, scrape the browned bits off the bottom of the pan. 

Add the stock, and bring the mixture to a boil remove from heat and pour into the crock pot.

Cook on low 6 - 8 hours on high 2 - 4 hours.

Stir in the capers and the parsley.

Serve over rice or pasta.

German Style Pork Roast



"German Style Pork Roast" is very tasty, and if you cook on low for 6 - 8 hours you'll have hours of kitchen-filling aromas that tempt your need for tasting.



Ingredients


4 pound pork roast
2 large yellow onions, peeled and sliced
1/2 cup Pacific Organic Chicken Stock
1/2 cup white cooking wine
1/4 teaspoon dill weed, chopped
1 teaspoon fresh thyme, chopped
1 teaspoon fresh sage, chopped
1/2 teaspoon sea salt
1/4 teaspoon pepper
2 (16 oz.) packages of sauerkraut


Directions



1. Put vegetables in the bottom of the crock pot.


2. Salt, pepper, and put in crock pot.


3. Add herbs.


4. Add Pacific Organic Chicken Stock and wine.


5. Cover and cook on low for 6 to 8 hours or on high 4 to 5 hours.


6. Remove the pork roast and vegetables with spatula.


7. Serve.

Old Fashioned Beef Stew


This delicious and hearty "Old Fashioned Beef Stew" crock pot recipe is perfect for when it’s so cold outside and you need some good old comfort food to warm you up.


Ingredients


2 pounds beef chuck or stew meat, cut into 
1 1/2 inch cubes
3 carrots , sliced
3 potatoes, cut into half inch cubes 
1 cup beef stock 
1 teaspoon Worcestershire sauce 
2 cloves garlic, minced 
1 bay leaf
1 teaspoon sea salt 
1/2 teaspoon black pepper  
1 teaspoon paprika 
3 medium yellow onions, quartered 
1 stalk celery what tops, chopped

Directions


Put vegetables in the bottom of the crock pot.

Seasoned meat with salt, pepper, paprika, and any other favorite seasonings.

Pour into the crock pot beef stock.

Add garlic, celery, Worcestershire and bay leaf.

Cover and said to cook on low for 10 to 12 hours or on high 5 to 6 hours.

Serve.

Chicken a la King


This creamy chicken with peas, topped with diced green or red peppers makes a perfect topping for noodles, rice, or potatoes, and it will be a family favorite.



Ingredients

1 Can (10¾ oz.) condensed cream of chicken soup
3 Tablespoons all-purpose flour
½ teaspoon pepper
Dash Cayenne pepper
1 pound boneless skinless chicken breasts cut into cubes
1 celery rib, chopped
½ cup chopped onion
1 package frozen peas

Directions

In a crock pot, combine soup, flour, pepper and cayenne pepper until smooth.
Stir in chicken, celery, and onion.
Cover and cook on low for 7-8 hours or until meat juices run clear.
Stir in peas and cook for another 30 minutes or until heated through.
Serve over biscuits or rice or noodles.
