Cannabis Pineapple Creme Pie

Pineapple Creme Pie

I have won high praise from this "Cannabis Pineapple Creme Pie" from seasoned pie bakers!  It has the rich delicious creamy pineapple flavor that is sure become one of your favorite pies.


Ingredients

1 cup Powdered Sugar
¼ cup Cornstarch
1 ½ cup cold water
3 egg yolks
1 Tablespoon Cannabis Butter
1 small can crushed pineapple
½ teaspoon pineapple, rum, or vanilla extract
1 pre-baked Cannabis Pie Crust

Directions

Preheat oven to 350̊, and bake pie crust until golden.
Combine powdered sugar and cornstarch with cold water in a medium sized heavy sauce-pot.
Stir in egg yolks.
Bring to boil over medium heat until thickened to the consistency of very thick pudding.
Remove from heat and stir in drained crushed pineapple.
Pour into baked pie shell and let cool before adding topping if using

Aunties Pineapple Crème Pie

Ingredients

1 cup Powdered Sugar

Gramm’s Easy Ambrosia Fruit Salad



You know when summer has arrived and barbecuing is in full swing when "Gramm’s Easy Ambrosia Fruit Salad" is being served. This sweet, creamsicle-colored concoction of pineapple, mini marshmallows, mandarin oranges, coconut, and sour cream was a tropical fruit salad a giant step beyond the hollowed out watermelon filled with fresh berries and melon. It not only looks good, it taste absolutely delicious on a hot day. A spoonful of something cold, sweet, and creamy that takes just minutes to prepare is an easy win.

Ingredients
20 oz. can pineapple in juice
11 oz. can mandarin orange segments
1 1/2 cup seedless grapes (use a mixture of green and red)
1 cup miniature marshmallows
1 cup flaked coconut
1/2 cup chopped walnuts or pecans
3/4 cup sour cream (or vanilla yogurt)
1 Tablespoon sugar
Directions
Drain pineapple. 

Drain oranges. 

Combine pineapple, oranges, grapes, marshmallows, coconut and nuts. 

Mix sour cream and sugar, stir into the fruit mixture. 

Chill and serve.

Pumpkin Pineapple Cheddar Cheese Ball



Great for any holiday and the "Pineapple Cheddar Cheese Ball" will have your guest talking about it long after the holiday.

Ingredients

1 (8 oz.) package Philadelphia Cream Cheese
1 (8 oz.) can Doles Sliced Pineapple
1 celery stalk with
1 package of Shredded Cheddar Cheese


Optional orange or red bell pepper cut into Jack-o-lanter’s eyes, nose and mouth. Press eyes, nose and mouth to make the face.

Directions


Drain pineapple.

In a mixer bowl add pineapple and cream cheese and beat until well blended.

Cover and refrigerate 1 hour.

Shape cream cheese mixture into a ball; roll in cheddar cheese and place on a platter.

Cut celery stalk so that it is two inches long; insert into the center of the cheese ball.

Serve with crackers.

Grilled Pineapple Avocado Blueberry Salad


"Grilled Pineapple Avocado Blueberry Salad" is perfect for any season. Add some nuts and/or chicken and you have a delicious entree.


Ingredients

1/2 small pineapple; peeled and sliced 1/4 inch thick
1 Tablespoon lime or lemon juice
1 Tablespoon orange zest
1/4 cup orange juice
1/2 cup olive oil
1 (10 oz.) package of mixed greens
1 large ripe avocado; diced
1 pint fresh ripe blueberries; rinsed
1 small red onion; peeled and sliced thinly

Directions

Once the grill is ready, grill the fresh pineapple until lightly caramelized and they are showing the grill mark.

Dice the pineapple

Combine juices and zest in a bowl.

Vigorously whisk. 

Adding slowly adding the olive oil until all the ingredients are combined. 

Set a small amount of the mixture.

Pour in into the sides greens and toss the salad until it is coated with the mixture.

Divide green evenly into salad bowls.

Using the same bowl add blueberries, avocado, onions, and the reminder of the mixture and toss until completely  coated with the mixture.

Divide green evenly into salad bowls.

Serve immediately.
